Mollydooker – The Boxer

Mollydooker is a renowned Australian wine producer based in McLaren Vale, South Australia. Founded in 2005 by Sarah and Sparky Marquis, the name “Mollydooker” is Australian slang for a left-handed person, and reflects the fact that both Sarah and Sparky are left-handed.
Mollydooker quickly gained international recognition for its rich, full-bodied wines and unique branding. The whimsical and artistic labels, often featuring playful illustrations, are a hallmark of the brand. Mollydooker wines are known for their richness and require oxygen to open up fully.
Many fans of the brand perform the “Mollydooker Shake” – a technique to release nitrogen gas added during bottling for preservation, enhancing the wine’s aroma and flavor.

The palate is greeted with generous flavors of fresh plum, complemented by undertones of mocha and licorice. The Boxer 2022 has a velvety plush texture with a plummy mouthfeel. Mollydooker wines are bottled with a small amount of nitrogen instead of additional sulfites to preserve their freshness and minimize chemical additives. The nitrogen can sometimes trap dissolved gases, creating a “tight” sensation on the palate. The shake releases this gas, allowing the full expression of the wine’s rich flavors and aromas.

How to Perform the Mollydooker Shake:

  1. Open the Bottle
  2. Pour out a small amount (about an ounce) to create space in the bottle.
  3. Replace the cap or cork securely
  4. Shake for 5-10 seconds
  5. Release the pressure
  6. Repeat once more
  7. Pour wine into a fresh glass
  8. Optional: Compare the original 1 ounce pour to the new pour.
